My mom needs some insurance for her refurb M1 MacBook Air, Apple Care isn’t available for it, any suggestions?

These types of insurance policies are very rarely worth the money. Make sure you’re absolutely certain about the terms, and whether or not the likely problems are covered. Also make sure they offer reasonable terms. You will probably lose the device for a lengthy period of time, and/or get a replacement and thus lose your data. (Just backing up the data in the first place is a better insurance plan IMHO.) I think if you do some searching, you’ll find very few happy customers who were well served, and a lot more who recommend against spending any money on this type of insurance.
The article does mention some names though, if you’re dead set on acquiring a policy.
