So I have upgraded to iOS 14.1 and notice that on Apple mail in my iCloud email is a notification I have one email, but my inbox is empty. Any ideas on what this might be or if anyone else has this issue

Did you check the spam box?
On my android phone - every once in a while I get a notice of an email. When I open the email app, it is there, but disappears so fast I can’t even touch it.
If I sign in on a computer and check the junk folder, it is there.
This doesn’t happen ever ytime, but maybe 6x a year… I know your hardware is different - but maybe it is there?
