Still watching the episode, but in regards to AI software detecting customer emotions:
AWS have been offering an AI service for contact centres for real time transcription and sentiment analysis during phone calls since at least late last year.

The teleconferencing systems continuing to collect your audio locally doesn’t seem like a problem. Some of the tools will pop up an alert if they detect audio but you are muted, which is a useful feature.

Obviously they need to continue sampling your microphone data to provide that. But they shouldn’t need to send that data to the mothership for such a feature.
