Controlling Gmail on a Pixel tablet with voice commands

I’ve just purchased a pixel tablet and dock. I’m having trouble setting up the function to control Gmail using voice commands. I want to be able to compose (dictate), send, receive and read (listen to) emails. I’d like to be able to do this when the tablet is locked or unlocked. The tablet will always be docked

Is downloading and using the voice assistant app the best way for me to approach this?

I’m using the Google Assistant at the moment. Should I try using the Gemini assistant instead?
